About 65% of the total honey production in Greece comes from the pine trees. In fact, the pine is considered the most important plant for the bee in Greece.

The taste is not too sweet due to the low concentration of sugar. Pine honey produced in spring is paler and more transparent than that produced in fall.

Pine honey is considered a very nutritious honey and this is mainly due to the large number of different substances found in the trees. Because these substances are dominated by metals and minerals (calcium,magnesium, zinc, iron, copper, etc.), which are present in large quantities in Greek pine.

Pine honey crystallizes relatively slowly, as the natural content of glucose is low. Pure pine remains liquid, i.e. without crystallization, for more than half a year.

Crystallization is a natural phenomenon of honey. To melt an already crystallized honey, gently heat it in a water bath (up to 40 degrees C)
